Gluten-free Orange Chocolate Chip Cake

The taste of this gluten-free Orange Chocolate Chip Cake reminds me of the chocolate orange I would receive as a child at Christmas-time. This is one of those recipes that is quick to whip up and it’s a crowd pleaser. The only thing I need to add to my grocery list is an fresh organic orange and some orange juice. Everything else for this Gluten-free Orange & Chocolate Cake I have on hand.

Even though we make an effort to not have every gadget in the kitchen and try and remain somewhat minimalist (being graded on a curve of course) the Microplane Grater and Zester has made the cut. I also make a family recipe that is an orange zest sugar cookie so I use it often enough to justify its existence in my kitchen.

 

 

Gluten-free Orange Chocolate Chip Cake

Ingredients
  1. 3 c. Bob's Red Mill Gluten Free 1-to-1 Baking Flour
  2. 1 TBS baking powder
  3. 3/4 c. shortening - I use Spectrum Naturals Organic All Vegetable Shortening
  4. 1 3/4 c. sugar cane
  5. 4 lg eggs
  6. 1 tea. vanilla
  7. Grated orange zest from 1 organic orange
  8. 1 c. orange juice
  9. 1 to 1 1/2 semi sweet chocolate chips
  10. Icing
  11. powdered sugar
  12. orange juice
Instructions
  1. Combine dry ingredients flour and baking powder, set aside.
  2. With a stand or hand mixer cream shorting and sugar until fluffy.
  3. Add eggs one at a time.
  4. Add vanilla , zest until incorporated.
  5. Rotate adding orange juice and dry ingredients until blended, do not over mix.
  6. Stir in chocolate chips with wooden spoon.
  7. Pour into bundt cake pan, smooth top.
  8. Bake 350° for approx 1 hour or until toothpick comes out clean.
  9. Let cool completely.
  10. Icing
  11. Combine approx 1/2 c. powdered sugar with orange juice until it is the consistency of icing. Spoon into plastic bag and zig-zag decorate the top of the cake.
Notes
  1. Sometimes if I am short on time I will dust the cake with powdered sugar and serve.
