Gluten-free Sausage Gravy

Gluten-free Sausage Gravy Biscuits and Gravy are a favorite in our house My gluten-free sausage gravy is super easy to make. I like to make it in large batches and freeze it in individual servings so that I can prepare a quick, hot breakfast in no time in the morning. 

Instead of purchasing breakfast sausage,  (it usually has added sugar and other junk I want to avoid) I just purchase ground pork. Everyone who knows me knows I am super picky about our meat and that I don’t like to touch uncooked meat. Niman Ranch ground sausage is available at Central Market in Poulsbo, WA and is my number-one choice (really my only choice unless I get it from the Farmer’s Market in the summer) for pork. Ground pork is unseasoned so below is the seasoning we use to turn it into breakfast sausage.

Breakfast Sausage Seasoning
Season one pound of ground pork for breakfast sausage with the following spices.

Ingredients
  1. 1/4 tea. sea salt
  2. 1/2 tea. ground black pepper
  3. 1/4 tea. dried thyme
  4. 1/2 tea. dried sage
  5. 1/8 tea. marjoram
  6. 1/8 tea. ground nutmeg
  7. pinch cayenne pepper
Instructions
  1. Combine spices
  2. Add to uncooked pork, incorporate well.

Gluten-free Sausage Gravy

Ingredients
  1. 1 lb ground pork with seasoning incorporated (see above recipe)
  2. 1/2 cup Maninis Multi-purpose flour
  3. 2 cups milk or milk substitute (rice, almond, coconut, hemp or soy)
  4. Additional salt and pepper or Cayenne to season as needed.
Instructions
  1. Brown and crumble sausage.
  2. Drain the majority (not every last bit) of water and grease off of the meat. Note: This is where I add the seasoning since I don't like to touch raw meat but I do believe it is more flavorful if you cook the seasonings with the meat.
  3. Coat meat with flour and add milk.
  4. Cook over medium heat stirring often until desired consistency.
  5. Add additional milk if it thickens to much.
Notes
  1. We use Maninis Multi Purpose Flour because I cannot tolerate rice flour very well and Maninis does not have rice in it. I have not tried different flour blends, but would assume you should be able to substitute okay. You may have to adjust the flour to milk ratio.
