As a family we have shifted from eating individually-packaged snacks at home, and these granola bars make for a quick, easy and healthy snack that your entire family will enjoy!  From start to finish they will only take you about 15 minutes.

  1. 1/2 c local honey
  2. 1/2 c coconut sugar
  3. 1-2 TBS coconut oil - see note below
  4. 1/2 c nut butter
  5. 2 c gluten free quick oats
  6. 2 c Barbara's Bakery Organic Brown Rice Crisps Cereal
  7. 1/4 c freshly ground flax seed
  8. 1/4 c unsweetened flaked coconut
  9. 1/4 c mini chocolate chips
  10. 1/4 c dried fruit
  11. 1/4 c nuts, chopped
  1. Lightly spray 9x13 pan
  2. In a large bowl mix quick oats, brown rice cereal, ground flax seed.
  3. Add coconut, nuts and fruit - do NOT add chocolate
  4. In a small pan heat honey and coconut sugar over med/high stirring constantly until sugar is fully dissolved. *add coconut oil* the amount of coconut oil you add depends on how dry your nut butter is, if it is oily you may not want to add any but if it is fairly dry add the full 2 TBS
  5. Remove from heat and quickly stir in nut butter.
  6. Pour the honey/sugar/nut butter mix slowly into the bowl while stirring. Sometimes once it has cooled slightly I will kneed it with my hands a little to make sure all the oats and cereal are coated.
  7. Press into 9x13 pan and top with mini chocolate chips. I use the bottom of my stainless 2c measuring cup to press the mixture down into the pan.
  8. Using a stainless steel cutter cut bars into desired size while still warm. Repress the bars using the measuring cup but now they are scored and will be ready to be served once completely cooled.
  9. I pop them in the refrigerator for about 15 minutes and when I take them out i will re-cut them and they are ready to be served.
